The team behind asian fusion resturant LONgTIME opened Japanese-inspired restaurant Hôntô on Alden Street in Fortitude Valley on Thursday 16 August.

The new restaurant describes itself as being “a lot of Japan and a little bit of Australia”, boasting a menu broken down into Raw, Bites, Bigs and Greens. Head Chef Nathan Lastevec collaborated with Tokyo native Kogi Ohori to create the menu, keeping the interpretation of the Asian cuisine familiar and approachable. Designed to mix and match, the Raw menu is as it sounds – Nathan’s version of sashimi, showcasing local seafood with unexpected pairings. The Bites are morsels designed to tingle tastebuds, while the Bigs are big in both flavour and size and Greens are on the side “for good health”.

Hôntô will also feature a Japanese whiskey bar called ÔÔ, with both venues drawing from a similar beverage selection. The drinks list includes wine from smaller Australian producers, with an emphasis on sustainable cultivation, biodynamic, organic and natural, alongside classic choices. The bar posseses extensive collection of rare and unusual Japanese whiskey and sake, specially selected to be paired with the cuisine. Also on the list are the usual cocktail, liquor, liqueur and beer suspects.

Hôntô is located next to the Matt Blatt loading dock in Alden Street, open Tuesday to Saturday, 5:30pm until late.
