An authentic Japanese restaurant is just weeks away from opening on the ground floor of new retail and dining precinct The Wellington, East Brisbane. Japanese chef Shun Mori will open Shunsai Restaurant, offering a fine dining menu of traditional and fresh seasonal dishes in the relaxed setting of 45 Wellington Road. The master of Japanese cuisine has completed his apprenticeship in Japan, cooked at the Japanese Embassy in Switzerland – where he catered for the Swedish Royal Family – and worked at several award winning Japanese restaurants in Sydney and Brisbane before deciding to open his own restaurant. Mr Mori chose The Wellington as his restaurant’s location because it suited his vision for an intimate dining experience. The Wellington apartment building is also right in the hub of East Brisbane’s vibrant culture with boutique cafes, stores, bars and The Gabba sports stadium, all within walking distance.

Mr Mori will introduce diners to the essence of authentic Japanese foods, featuring produce from local butchers, fishmongers and vegetable producers. “We will be serving traditional Japanese food using fresh, local, in-season ingredients,” said Mr Mori. “It will be very different to what is currently on offer in Brisbane. Our focus is on fine dining, with our menu including seven-course meals.” The father of three will be joined by his wife Miho, who will manage the front of house. Shunsai Japanese Restaurant will take up the 56 square metre space next door to the already well established Min & Co Cafe and is expected to be open to the public by early June. Shunsai will be open for dinner from Tuesday to Saturday between 5.30-9.30pm and lunch from Wednesday to Saturday between 11.30am-2.30pm.
