We spoke to Dan Jarrett, head chef at The Tamarind about all things food. 

What has been a highlight of your chef career?

For me at the time it was achieving two Chef Hats cooking a cuisine I had to learn for myself, as I had never cooked Asian before.

Favourite international holiday destination and why?

China. I was so far out of my comfort zone. The food, the culture; it was an amazing experience.

Ultimate Australian escape and why?

I would love to go to Satellite Island in Tasmania. I have never been to Tasmania and this Island would be the best place to relax and unwind.

Which do you prefer, city or country living, and why?

I actually love where I am on the Sunshine Coast as I get the beautiful beaches and then after a 30-minute drive you are in the hinterland. Cities are great to visit but it is also nice to leave.

If you could have dinner with anyone, who would it be and what would you serve?

Dave Grohl, Michael Schumacher, Roy Choi, Aaron Franklin and David Chang. The food would be barbecue, smoked and grilled meats and beers, good conversation and tunes.

A weekend in spring is best spent?

With my family having fish and chips down at the beach.
