Tasmania — we go there often and it’s such a beautiful place — west coast is so raw and rugged and the produce and wine there is amazing. So great for eating and adventure.
Which do you prefer — country or city living, and why?
City … I love being in amongst the action.
If you could have dinner with anyone, who would it be, and what would you serve?
Kelly Slater. Inspirational athlete who keeps healthy and young by doing what he loves. I would probably serve him my duck broth with pork dumplings and then John Dory oyster paupiettes. I know he would appreciate the fresh, healthy, flavoursome dishes.

Skiing all day and then eating good food and drinking wine by a fire.
How did it feel being awarded a Chef’s Hat?
It was an awesome feeling! It had been a great year — my first baby girl was born just a few months before that so I was already on a high and then to win a Chef’s Hat just added to the feeling.
