Videre High Tea, previously known as Videre Restaurant located at RACV Royal Pines Resort, has been transformed into a High Tea lounge with spectacular city skyline views on the Gold Coast. In addition to the iconic views, RACV Royal Pines Resort’s newest addition will deliver a sophisticated interpretation of the classic High Tea experience with a uniquely Australian flavor.

RACV Executive Chef, Glenn Bacon has created a menu that pays homage to classic high tea fare with a few delicious, modern Australian twists. The menu features delicacies such as a smoked salmon, quandong and cucumber club, Camel milk feta quiche, and house-made blackberry and strawberry gum jam; alongside scrumptious sweets like the Granny Smith apple and macadamia bomb and passionfruit meringue.

“The menu will change each season,” says Bacon. “However the one constant will be our use of indigenous Australian ingredients. Ever since my days working in Alice Springs back in the 90s, I have made a point of using native ingredients in a lot of my dishes. As a proud Australian chef, I feel privileged to be able to source and
showcase such unique ingredients to our guests.”

“Wattle is a great example of an indigenous ingredient that has a really interesting flavor profile, similar to that of toasted coffee, it can be used in so many applications. Riberry, Quongdong and Strawberry Gum are also among some of my favorites as these types of ingredients lend themselves to both sweet and savory applications,” Bacon said.

The Videre High Tea does not only serve scones and quiches, but it also provides filling dishes such as buttermilk chicken slider topped with lemon myrtle mayonnaise and served atop a charcoal bun. Moreover, the lounge has drinks available for customers to enjoy with their High Tea, ranging from unlimited Tea Drop tea and French press coffee served by classic trolley service, to wine and champagne.
