A new Cali vibe has arrived to Brisbane! Fortitude Valley has just become home to a new-age modern Mexican restaurant, Baja. This new restaurant is here to deliver authentic and fresh SoCal style Mexican food, with Japanese influences and fresh Queensland produce. Baja is the newest edition to the evolving Fortitude Valley hospitality scene, ready to bridge the gap between Brisbane and South America.

The owner Daniel Quinn said “our goal is for Baja to open up a dialogue for this under represented cuisine in Brisbane. We want the flavour profiles of the food to evolve as our customers become more familiar with the menu and to continue to grow our artisanal selection of Mezcals and Tequilas.” The menu is centred around dishes intended to share, made with all fresh ingredients that are locally sourced.

Head Chef Valerie Frei, originally from Germany, has most notably worked at Rutz, a two-Michelin-starred wine bar and restaurant in Berlin before making the move to Oaxaca, Mexico. Here she worked with Head Chef Julio Aguilera at highly regarded El Destilado. Under Aguilera’s guidance they worked on the Baja’s menu in Oaxaca before Frei brought the recipes with her across the Pacific Ocean alongside five kilos of dried chillies. Rounding out the team is Sous Chef Julius Villamor, Restaurant Manager Bunnie Chase and Bar Supervisor Alicel Caasi.

The restaurant is located at 211 Brunswick St, Fortitude Valley underneath the recently completed third tower of the FV Peppers hotel and residences. The interior, designed by Quinn’s partner Sarah Vize aims to transport guests to paradise within The Valley.
