Leading Brisbane sister restaurants Urbane and The Euro are using the principles of digestion to manage food waste and deliver a greener and more sustainable dining experience.

Executive Chef Andrew Gunn and his team have recently welcomed the ORCA composter which features technology that mimics natural digestion. Using oxygen in the air, water, and ORCA’s Biochips and microbial mixtures, food waste which is put into the ORCA unit is broken down, eventually becoming an environmentally safe liquid which can be disposed of down the drain.  It’s the leader in clean food waste recycling.

Gunn said ORCA had already made a huge difference. “There is a guilty feeling that comes with throwing out wasted food. It’s not just what is left on plates, but also what gets tossed during meal preparation. All ended up in some sort of recycling bin here at Urbane and The Euro, however it wasn’t until we brought in ORCA that the significance of the new system really hit us,” he said. “All food waste is now effectively digested by ORCA and disposed of naturally. This helps to lower our carbon footprint in a number of ways. Firstly, by reducing the amount of trucks required to transport waste from the restaurant. Secondly, by minimizing greenhouse gases which are produced by decomposing food waste such as methane and carbon dioxide. Thirdly, by turning the waste into liquid which can be recycled at water processing plants”, he added.

It should not come as a surprise that using the ORCA unit is 65 times better for the environment than sending waste to landfill.
