Emporium Hotel has appointed talented Benny Lam as the new head chef at The Terrace rooftop bar and restaurant in South Bank. Coming from a career in graphic marketing and design in Hong Kong, Lam has a passion for simple food big in flavour and presentation.

With previous experience in his field at Brisbane favourites, Sichuan Bang, Heya Bar and most recently as senior sous chef for Donna Chang, his experience is undoubtedly remarkable. Now, joining the multi-award-winning luxury boutique Emporium Hotel South Bank team as the head chef Lam will oversee the all-day dining menu comprising of bites, small plates and full meals with a focus on fresh seafood and the best of local and Australian seasonal produce.

From fish tacos and sashimi to Sichuan style grilled market fish and twice-cooked char suit style pork belly and fan favourite wasabi fries the exquisite menu suits all. With an extensive wine and cocktail list and desserts such as lemon and plum semifreddo and ruby chocolate meringue, the Terrace offers a modern Australian fusion style with spectacular views of Brisbane’s CBD, South Bank and the Brisbane River from 21 storeys high.

Open seven days a week for breakfast, lunch and dinner Emporium is a firm favourite among locals and visitors. With its open rooftop, pool deck and in-built white onyx bar, the Terrace is an impressive Queensland experience due to its sophisticated vibe and interiors reflecting a subtropical oasis in the bustling city. Lam commenced as a head chef as of August 2020 working under Executive Chef Chris Norman who oversees the hotels four-food and beverage outlets including Signature, Belle Epoque, the Terrace and Piano Bar plus in-room dining, conferences and events.
