Ralph So has been appointed Head Chef at Felons Barrel Hall at Howard Smith Wharves where he has created an adventurous new menu.

It may have only recently opened, but already Felons Barrel Hall has become the popular new hotspot of Brisbane. Boasting European beer hall vibes, live music and icy cold brews, Felons Barrel Hall redefines beer and the brewery experience, and with renowned chef Ralph So leading the team as head chef with light, fresh and spicy dishes that are a modern Australian take on South East Asian flavours, the new venue offers a complete sensory experience.

Born and raised in Malaysia, Ralph discovered his passion for food from a young age, immersing himself in the melting pot of culinary offerings found in his city, from classic Malaysian dishes to those from European countries such as Portugal, the Netherlands and England. It is this experience that has influenced Ralph’s adventurous cooking style which can be seen in the unpredictable menu that the former head chef of the hatted Chin Chin Sydney has created for Felons Barrel Hall, which takes beer and food pairings to a new level.

Ralph brings a wealth of experience to Felons Barrel Hall, and since arriving in Australia in 2009, has held roles at some of the country’s most well-known dining institutions. Beginning at Koi in Broadbeach, Ralph’s talent in the kitchen has also taken him to Rosetta and Spice Temple Melbourne, where he helped the restaurant achieve two hats. It was in his role at Chin Chin that Ralph worked closely with Howard Smith Wharves Culinary Director, David Finlayson, with whom he shares a passion and love for Asian food and flavours.

Returning to the sunshine state to take on this new role, Ralph said, “The food is playful, fresh, and robust, but also delicious, sharp and colourful. The dishes at Felons Barrel Hall are designed to share with family and friends, and champion Australian farmers and producers. I’m delighted to be working with David again and to play a part in giving Brisbane another strong layer of food, drinks and entertainment at this exciting new venue.
